If an individual wasn't invited to a meeting, should the minutes show the person as absent?

Nothing in RONR suggests that the minutes should show who was present (or absent) other than to indicate who was presiding and who was acting as secretary.

But, at the risk of encroaching on our irrepressibly ruminative colleague's bailiwick, your question raises another question: Is this individual who wasn't invited a member and, if he is, why wasn't he invited?
