The process for amending your bylaws is probably set forth in the bylaws themselves.  Apparently it requires a vote of the membership at the annual meeting, among other possible requirements.

The Board can't override the bylaws, and has only those powers granted to it by the bylaws.

Agreeing with the other comments, I suppose the board and its members can informally refer to officers by whatever names it desires, but any name change won’t be official until the change is made in the bylaws. I’m curious, though: why would the board want to refer to an officer by a title not provided for in the bylaws?  It seems that doing so would only cause confusion.  It would seem awfully strange for the board minutes to be referring to an officer position that does not exist.
