This is a multi-facet question regarding bylaws:

If the bylaws do not specify the specific duties of the nominating committee to present multiple names for officers, is it permissible to submit only one name per office providing that nominations are taken from the floor? Is it recommended that a paper ballot instead of a show of hands or aye be done?

I am not clear if the slate of officers should be provided to the membership prior to meeting where a vote will be cast.  Should the specifics of voting and nominations be stated in the bylaws?

Yes. Indeed, the nominating committee normally only submits one name per office.

Based on this question, I assume your bylaws are silent on this subject.

A ballot vote is strongly recommended for elections of officers, unless there is only one nominee for a particular office, in which case the chairman simply declares the candidate elected by acclamation.

RONR does not require that the nominating committee's report be provided to the membership prior to the meeting, but it also does not prohibit it.

A provision requiring that ballot vote would be better to be in the bylaws. However, other Provisions regarding voting and nominations could be in the bylaws but do not need to be. The bylaws could reference a lower-level document that could be amended more easily. The important point is that it is better to decide how to handle questions and details around voting and nominations ahead of time and write them down so that you are not making judgments on the spot in the middle of an election.
