Are you limited to only certain subjects that can be discussed in closed executive session during a Board meeting

Executive session refers to a meeting or portion thereof in which the proceedings are secret. There is no limitation on the subjects that can be discussed*. See RONR(10th ed.), p. 92-93 for details.

(* though, while in executive session, a motion to go into executive session would seem to be out of order :P )

When a Board of Directors of a private club adjourns to go into executive session, are other non-elected members allowed to attend?

An assembly should not "adjourn" to go into executive session, since the executive session will take place in the same meeting. However, the board would decide which, if any, nonmembers of the board are permitted to attend the executive session. Only members of the board have the right to attend board meetings, but how they became members (elected or otherwise) is immaterial.

Once the meeting adjourns, it is too late to go into executive session. But when it does, all members of the board have the right to attend. People (whether members of the club or not) who are not board members may attend only with the permission of (a majority of) the board, presumably because the board feels they can inform its deliberations regarding the confidential matter(s) being discussed.

According to RONR, the rights of board members does not depend upon how they became members (elected or not) unless your bylaws provide otherwise.
