Resignation of elected 3 year term member

Our Bylaws allow the current President of our organization to appoint a replacement for an elected 3 year term committee member.  Our presidents only hold office for one year, so the appointment is good for that year only. How do we handle the rest of the committee members term if she resigned in her first year?

This has nothing to do with the president's term, but rather that appointments last only until the next convention.  Presumably, if the convention is where people get elected, the unexpired remainder of that term would then be up for election at that time.

I agree with Gary's statement, but would add that perhaps your bylaws should be amended at some point to make clear that at the next convention someone shall be elected to fill the remainder of the unexpired term.  Check first, though, to make sure the bylaws don't already say that.  I suspect they do, but that the provision may be in another part of the bylaws.
