May a secretary record in the minutes that a vote was "Unanimous," or "Motion carried Unanimously"? If such is permissible, what form of voting procedure(s) must be followed?

It's not necessary, but if the body accepts it when they approve the minutes, then it's fine.

Unanimous consent, in RONR, means that no one votes against the proposal or motion. Abstentions do not take away from unanimous consent. See RONR (12th ed.) 4:58-63

Agreeing with the answer above by Dr. Kapur, the secretary may state in the minutes that a motion was adopted unanimously. However, it is not required and RONR has nothing to say on that point. A simple statement that the motion was adopted is all that is necessary and is all that RONR requires.
